How DO you please everyone??

No1 Daughter only likes jelly marmalade. Like Golden Shred . SHUDDER!! Which we DON'T have.

So she takes the jelly bit from our jars.

How do I make a jelliesh thing without wasting all that expensive fruit?

This year I just bottled the juicy dregs of the pan for Her.

Well if the juicy dregs were the same juicy marmalade that came in my jar, she had a treat!  What were the citrus Tim?

This year I just bottled the juicy dregs of the pan for Her.

That's exactly what I'd do! Strain as many jars as she's likely to get through, then toss the peel back into the pan for the chomping faction.

Side note: the scum pot from each batch gets eaten fresh here, like a sort of souffle jelly on bread, might she enjoy the marmalade scum pot? It will keep fine for a few weeks ;D

Soufflé Sarah? Agree - a treat!

Emma - main difference is more fruit than most - pressure cooked for 15 min, & only put in when everything else is up to temperature.

4lb Sevilles
31/2 pt Water
1 big fleshy Lemon
6lb Sugar

Tip for easy pressure cooker marmalade :D
(a nice clear marmalade with no juice squeezing, muslin baggery, or blisters from shredding tough raw fruit - this is a bit like no-dig marmalade making lol)

Scrub and quarter fruit.
Put fruit into pressure cooker with liquid.
Pressure cook at night - 15-20 mins - and let cool overnight.
In the morning scoop out the middles for goo, stack the skins and slice for peel, they will cut like butter.
Put goo into jelly bag and squeeze for all you're worth to get as much liquid out as possible.
Tip shreds and liquid into the jam pan, add sugar.
Proceed with recipe!
