Pretty lunch - Beetroot and feta couscous

I wish I had taken a photo of my lunch today to show you all - the colour of the beetroot has bled in to the couscous, and the feta is still white - I only added that before serving.

The whole recipe is pretty simple - cook couscous, add diced roasted beetroot (did extra with last night's dinner) a bit of lemon and olive oil, and diced feta. Easily made the night before, and left in the bottom of my bag till lunch time.

Less staining potential than soup too! And totally delicious - the earthy sweet beetroot contrasted by the tangy feta!
Lottie-less until I can afford a house with it's own garden.

sounds great - bit better than my reheated tuna pasta bake - eaten from the tupperware box whilst chasing a cat from the garden, ringing my bank and repotting a plant that a thoughtful squirrel had decided to dig up for me..........

We wish too, Moggle. Sounds great, but I'll stick to my non-staining golden.
