How long will it keep for in the beer-making barrel ?

Stupid question of the day - what are 'lees' ?

Muddy_Boots:
Keeps in beer barrel for long time after finished working and ready for drinking.  Lees is the rubish you get after making wine, beer or anything, in other words sludge!  Like I said, if you turn tap very slowly, it will leave sludge at bottom of barrel!
