Topic: Root ginger ...

... now you might all know this already, but I only found out recently that if you buy big lumps of ginger from the market at a reasonable price (as I do) you can peel and freeze it whole.  Then grate what you need from frozen or hack it off with a sharp knife.

Just a thought, I did exactly the same thing.  However, did find it was a bit awkward to use grating it after frozen.  A bit too squishy.  Now, I grate it and then freeze it.  Much easier and you can either portion it or break off just the amount you need. ;)

Yes - we always have it as a back-up. But do suck out all the air before freezing.  And every time you use it!

I just leave mine, whole, in a cool pantry - lasts for eons or at least until all used, then just buy more or dig some up out of a pot - much easier  8)

I have got to ask ... why do you need to suck the air out of it?  And I'm assuming you mean the bag not the root ginger itself ...  ;D

Calendula: could you describe how you look after the ginger root in a pot?

I keep it indorrs as opposed to a g/h because it is warmer and don't really do anything except water when necessary - it is in quite a big pot so it will grow on nicely and just harvest when the root is much much bigger than the piece I planted - if you are in a mild location then a g/h will be ok  :)
