Cucumber mountain

I could really do with some recipe ideas for cucumbers as I am picking about 6 every visit!  I have a fridge drawer full, and now this bowl!  HELP!  ;D

I put thickly sliced cucumber into chana dal EJ (no.1 son fishes it out again but that's another story >:( ;))

Those were well written up in last w/e's mag, Emma. Just wiped it off the disk!

I love them steamed - possibly with lemon sauce - with fish.

Yoghurt & Cumber Salad
Recipe

1.   1 tub of Greek yoghurt
2.   1 small single cream
3.   Small bunch of fresh mint finely chopped
4.   Pinch of salt
5.   Pinch of black pepper
6.   I clove of garlic crushed (optional)
7.   1 or 2 cucumber peeled – pips out finely grated (or as many as u like)

Mix all of the above ingredients together,
Goes nicely with chicken or lamb, roasts or barbeque.

My wife's recipe, hope u like it!
