You won't get the same cherry or plum if you manage to get a sucker up and growing elsewhere, as it will have usually sprouted from the rootstock. So, what you will get is a tree that is good for rootstock, but probably won't bear a lot of fruit. Ok to use for a bit of hedging maybe.
What you could do, is grow the rootstock for a year, then take cuttings from the top part of your tree, and try to graft the top cutting onto the rootstock you've grown.
