You see, you have too many and you complain, you don't have enough and you miss them!  
Parsnip crisps are yummy, I agree, and so is parsnip soup!  I use a little grated in anything I am making for the kids, like spag bol, stews and casseroles, even shepherds pie - good way of them getting some vitamins without realising, also, I use them with spuds when making mash - boil 'em up with the spuds, mash down with lots of butter, makes a good sweet yummy mash to have with bangers!   ;D

Had roasted parsnip and squash last night, with garlic olive oil and black olives sprinkled over.sounds a weird combo but was delish!

Oh parsnip wine 6lb of parsnips to a gallon,
To late for me this year to put them down but when the runners finished some got frozen now were in to the cabbages loads of them then to follow the leeks.
But cannot wait to plant the root crops which I love.

Problem solved.  One of those "Experts" living nearby loftily assured me this morning that it is impossible to grow decent parsnips in our soil - so I gave him some!
