Taste of new potatoes

Have harvested first early Duke of York and second early Kestrel. Both taste great when cold but when eaten hot leave a strange bitter sort of taste at the back of the throat, any ideas why, is it just the variety ?

I had that with one of my plants, think it was International Kidney, I wondered if it was down to lack of water? DP
