Courgette Cake

Making a couple of these this afternoon at the request   :o  of my teenager! (she loves em!)

Pre-heat your oven to Gas 4
Grease and line 2 loaf pans

8oz Caster sugar
8oz Plain Flour
1/4 Teaspoon Bicarbonate of soda
2 teaspoons Baking Powder
1/2 teaspoon salt
2 teaspoon ground cinnamon
3 eggs
8 fl oz vegetable oil
8oz courgettes grated
2 tsp vanilla essence
5oz Raisins (optional)
4oz Walnuts (Optional)

Mix all the dry ingredients, add oil, vanilla and eggs, mix well and add rest of the ingredients, put into  loaf pans and bake for  40 mins until cooked.

The other recipe I use has more spices and orange peel,
Mix as above!

8oz cater sugar
6oz soft brown sugar
12oz plain flour
2 tsp Bicarb
1 tsp baking powder
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 teaspoon salt
8 floz vegetable oil
1 tablespoon vanilla essence
3 eggs
8oz courgettes grated
7 oz raisins (optional)
1 Tablespoon grated orange peel

Pour into a 13x9 inch loaf pan.
Bake 45-50 mins at gas mark 4 until cooked.

sound good! just picked 8 of the things as we were away at the weekend.... so 4 of them were more like baby marrows!

What kind of size courgette do you class as one? would it make much of a difference to the recipe....

Daisymay I do it all by weight, 8oz courgettes, it is a great way of using up the ones with delusions of being marrows! ;D

really should learn to read!! I read this as 8 courgettes not 8oz! sorry DP  ;D

Brilliant - thanks for that... I have 4 large courgettes (must have eaten 30 already) on my worktop... god knows how many are ready AGAIN down the lotty!

I noticed the smaller the courgette picked - the more bitter it is... also my neighbour leaves his to grow HUGE almost marrow size. I pick mine at about 10-12 inches MAXIMUM.

Wow - was dubious about this but anything with courgettes in gets done in my house at the moment.  Made the spiced one - without raisins as I have run out and it is fantastic.  And easy enough for 3 year old to help too.  She now calls it sunshine cake as we used a yellow courgette with lemon instead of orange!!!

Thanks DP, I made the second one on Saturday and brought one into work today.  It's devine, and everyone who's been brave enough to try it has so far agreed...pity it only used up 1 courgette though, but I guess 1 is beter than none :-)

Sweet-pea it freezes well so you could make LOADS and get rid of more cougettes that way! ;) ;D

Yes, I already have one in the freezer..thinking of asking my landlord if I can buy another freezer as I'm rapidly filling ours up!
I'm planning on making the chocolate version as there is one person in the office who won't try it as I mentioned it had courgettes in it, but I think I'll bring it into the office and not tell him it's still courgette cake until he's tried and liked it, although I think I'll have trouble keeping a straight face!

Another happy and friends and family enjoyed it here DP!  It went in a flash.  I was going to ask if it freezes so am really glad it does as I can make a few and freeze them, rather than overloading my family with them now!

BL what a good idea adding the icing, I love the lemony icing on the top of carrot cake so it would go well on this. Ummmm!!
