It was a tad nippy up north as well, but that soup looks like    :sunny: in a bowl.

I like the recipe below for butternut squash soup and Mary Berry has a god one on the BBC Food website - http://www.bbc.co.uk/food/recipes/roasted_butternut_squash_10281

Don't always fancy soup tho so I'm going to try this when I find some cavolo nero - http://www.bbcgoodfood.com/recipes/squash-steaks-chestnut-cavolo-nero-pilaf

Butternut soup

1    butternut squash, halved and deseeded
2   cloves of garlic
   Olive oil
1    onion, chopped
1   chilli, chopped
1”   ginger, peeled and grated
900ml   stock
1   lime

Place a clove of garlic in each half, brush wih olive oil and bake for 30 mins at 180C.

Soften the onion in some more olive oil, add the chilli and ginger and then the garlic and roast flesh from the butternut.   Stir well then add the stock and cook for 15 mins.

Blitz.  Add the lime juice and s&p to taste.

Serve garnished with freshly chopped chilli and a swirl of cream or coconut cream and a sprinkling of freshly chopped coriander.
