Elderflower Cordial whats gone wrong ?
« on: July 10, 2016, 09:51:52 »
I've made my Cordial as per Mary Berry's recipe using citric acid. After a week I noticed  I have what I would describe as little clouds of film floating in the tops and middle of the bottles. Anyone any ideas what this is, cause and can this be remedied ?

it may be just particulates clumping together...
Unless you filter it you will get pollen and other bits of detritus floating around and it does tend to clump together a bit.  Or it could be starting to ferment a bit and natural yeasts might be active but it would start to go a bit fizzy.  I would't worry about it too much.  I freeze mine in ice cube trays to make it last longer and one or two in a glass of water makes a decent drink.
Moved to Portugal - ain't going back!

Hi Fitzie,
I strain mine through a piece of muslin a couple of times which clears it nicely!

I've also reduced some of mine to concentrate the flavour  & use in cooking
