Quince Jelly
« on: November 29, 2015, 20:44:36 »
Some time back I raised the question of how quince from chaenomeles japonica compared to the fruit from a quince tree. Well, having lost my usual supply of quince after my friends tree went over, I picked up some fruit from a chaenomeles japonica last week and just turned it into jelly. First impressions are that it sets amazingly quickly, starting to turn almost as soon as it gets to boiling. It then seemed to pour into jars in lumps so think it will set fairly solid. Besides that, its perhaps a little less fruity but several times more tangy. I shall definitely be looking for a bush for my own garden.

I love japonica jelly - it's lovely and spicy compared to big quinces. I boil it up with a fair bit of water, so I get a softer set from the strained liquid.
