Help....... tomato glut what do I do ?
« on: August 01, 2015, 10:23:05 »
You've probably had other similar posts in the past but I can't find anything to help me My greenhouse tomatoes are all starting to ripen and I'm going to have loads. Mixture of various red & yellows. My trouble is that I still have in the freezer tomatoes from last year. Cooked and whizzed for sauces.(MOH is not a lover which doesn't help !!)
I've tried drying but not too successful and with all the effort I put into growing them I don't want to waste them . What else I can do with them? Or is their any easier techniques fro drying I can try. Mine were done in a low oven with door open , not the most economical recipe and they still got mould.
Any other suggestions gratefully received

Have you tried the microwave?  If you google dried tomatoes and microwave there are various techniques.

Sprinkling them with salt, or dipping in vinegar might help to prevent them going mouldy.

My mother in law used to bottle them.   But the bottles are expensive.

You could do tomato and chili harissa - recipe on BBC Good Food.

Have a look at this site - http://www.green-talk.com/recipes-for-tomatoes/
and this - http://www.britishlarder.co.uk/what-to-do-with-a-glut-of-tomatoes/#axzz3hZqzVMr1
and this - http://allrecipes.co.uk/recipes/tag-815/tomato-recipes.aspx

My tomatoes are all still green but i'm hoping for a mini glut.

Like the recipes from british larder. I'm eating my yellow ones already and have masses of green waiting to turn red. They're pretty big as well. My best ever.
I've taken the bullet and have bought a dehydrator, nothing too big but enough for the tomatoes and maybe fruit on other occasions.
I think I will still have enough to try  some of those new recipes as well

thxs for the tips
