Substitute for meat layer

I am thinking of having a bash at making a tourte milanese.  Lovely colourful layers.  However the recipes state a layer of either ham or turkey.  As I do not want to use meat i could either leave out this layer or use Quorn.  Does anyone have any idea what alternative I could use instead of meat or pretend meat?

A layer of grated cheddar or your favourite hard cheese or crumbled goat's cheese.   

Red lentils cooked with finely chopped onions or shallots and some herbs and a little oil.   

Finely chopped mushrooms with onions and garlic and herbs and cooked in a little olive oil or butter till fairly dry. 

Cannellini beans crushed with finely chopped cooked shallots and some basil.

Maybe a bit of chili in any of the last 3.

Thanks for the ideas Obbelix.  There is a layer of cheese in the recipe already but I like the idea of either the mushrooms or the lentils.  Just waiting for my spinachy veg to grow.

You could use Puy lentils if you want a bit more texture and Italian herbs like fennel seeds, rosemary, sage and/or basil.  Maybe some chili too.
