Dorset Wild Garlic and Basil Pesto Bread Crumbed Cod

With Wild Garlic in abundance in Leafy Dorset it seemed rude not to
pick a tray full for assorted kitchen creations.......

don't panic....don't panic......if your County hasn't got any.....

just cheat  !!!!!!!!!! nobody will know.

a few Spinach leaves and  2 cloves of Garlic are a good imitation.



INGREDIENTS

2 x Loins of Cod Fillet
Bunch of Wild Garlic
Few Basil Leaves
Olive Oil
100g Bread Crumbs
Pepper and Salt

Blitz the Wild Garlic and Basil leaves and add Olive oil to form
a paste Pesto.



Place the cod loins in an oiled baking dish and spread the paste on top
cover and set aside in the fridge.



cover the cod fillets with the bread crumbs and season well,add cut tomatoes if you wish.

Heat oven to 200 degrees..................



Place baking dish on middle shelf and cook for 20 mins till fish is cooked through .....put dish under grill to toast breadcrumbs.



Serve with new spuds and peas for a simple cod supper with mild Subtle Garlic and Basil flavour.
