Cod with Pancetta & Puy Lentil Broth

A warming filling soup that works just as well on its own but the bacon flavours really add a lovely flavour to the Cod fillet.

So lets get busy  ........................

INGREDIENTS



 4 slices thin prosciutto 
 olive oil for cooking
 100 g  pancetta, diced 
 1  onion, finely diced 
 1  carrot, finely diced 
 1  leek, finely diced
1/2 Fennel Head finely diced
 1 stick  celery, finely diced 
 2 cloves  garlic, crushed 
 2 sprigs  thyme, leaves removed and chopped or 1/2 tsp dried 
 2 sprigs  rosemary, leaves removed and chopped or 1/2 tsp dried
 Microwave Puy Lentils or soaked dried 
 1 litre  chicken stock 
  vegetable oil, for frying 
 1 cod fillet per person   
 30 g  unsalted butter 
 chopped parsley garnish
 salt and pepper



First of all lets roast the Prosciutto on 140 degrees for 15 mins...keep an eye as you wont want it too crisp..!!!!!!! once done set aside.



Meanwhile, pour the olive oil into a wok/saucepan and gently cook the pancetta, onion, carrot, leek, celery, Fennel, garlic, thyme and rosemary for 10 minutes to soften,



 then add the chicken stock. Bring to the boil and simmer, This should take around 10 minutes, keep tasting but careful with the seasoning as the bacon adds salt flavour to the broth.



If you've time you can soak the dry Puy Lentils and cook but ive found the
....1 minute pre cooked Microwave lentils available are equally tasty
and once cooked just add to the broth and simmer for the final 5 mins....



Ok,lets heat a splash of oil and a thingy of butter in the pan around
180 degrees....and gently cook the seasoned Cod fillet for 5 mins then turn over and cook through for another 4 mins or so  !!!!!



You can undercook the fillet if you wish and break up the cod fillet
and sit under the Broth surface to finish off cooking.



Serve your Puy Lentils in a big bowl and then sit your cod fillet on top
and sprinkle some Chopped Parsley over and add the roasted Prosciutto
slices on top.

Get stuck in  !!!!!!!!!!!!!!
