Sticky Toffee Cake

If you like sticky toffee pudding you'll love this!!  I decided to bake a couple of these on my baking day yesterday.

6 ozs dried dates
300ml water
1tsp bicarb of soda
6ozs soft light brown sugar
4ozs marg
3 eggs beaten
6 ozs self raising flour

For the icing:

6 tbsps double cream
3ozs soft light brown sugar
1oz butter
2ozs icing sugar


Cut the dates into small pieces. Place in saucepan with water. Bring to boil and boil for about 10mins.  Remove from heat, stir in bicarb of soda and set aside to cool.
Cream together marg and sugar. Beat in the eggs and fold in cooled date mixture. Stir in the flour.
Spoon mixture into 2 1lb loaf tins and bake for 35 mins. Remove from oven and cool.

For the icing gently heat the cream, sugar and butter in a small pan. bring to the boil and cook for 4 mins until golden. Leave to cool and beat in the icing sugar. Spread on top of cake.

Mmm, dates! I'll have try this with walnuts in it. My mum loves date and walnut cake. :)

Now that looks delish...but im afraid Jude would be floating me in the back garden on a string like a balloon with the sugar content
...oh the joys of.... Diabetes....but thank you Yorkshire lass im no cake maker but ive got a couple of chocky puds/cake recipes here somewhere that ive fed the girls on before......and ...ssshhhh     they didn't know it was supposed to be for D,s and scoffed it down with Tea.

Looks lovely by the way.

Good looking recipe and cake.  Thanks.

I shall try it out on my scientists (English conversation class on Mondays) as I like to use them as guinea pigs and try new recipes on them.   Maybe also on my dancers - president of a dance club here and I make cakes when we have a special class on Sundays.  Today was Viennese waltz and they got chocolate carrot cake and almond and marmalade cake with their coffee.
