Has anybody got a recipe for sweetcorn that missed its "pick by" date, please? I'm going to make soup and would appreciate some more ideas.

Ooh, sweetcorn fritters are delicious. I make mine with gram flour and a little Cajun seasoning to spice them up. Yummy with sour cream and/or salsa.

You can strip kernels with a sharp knife and add to pasta sauce or slow-cooker stews - anything with a bit of cooking time.

If the kernels are hard they would need to be soaked like dry beans then cooked.
