I was fortunate to get a few fish from my day out yesterday.......so.....

As we had some Fat Bream in the fridge it seemed Rude not to Feed the
girls and yours truly with them.

INGREDIENTS

1 x 1 to 2lb Sea Bream Filleted,1 Fillet per person
Fresh Sprigs of Rosemary and Thyme ( or 1/2 Tsp dried)
Olive Oil for cooking
100ml Vegetable stock
few raw prawns
salt and pepper

ROASTING VEGGIES

New Potatoes
small tommies on the vine
whole shallots peeled
spring onions
6 cloves of garlic peeled
salt and pepper
splash olive oil
100ml vegetable stock
thingy of butter




Fin,scale,fillet and pin bone your Bream.



Lay out a 24 ins x 16 ins Piece of kitchen foil...now a same size piece of parchment paper on top of the foil...Place fillet and Drizzle with Olive Oil and a splash of Vegetable stock...season well  !!!!!
Now top with a sprig of Thyme and Rosemary or dried herbs....



Meet top and bottom edges of parchment paper and roll together,now bring in ends and tuck in.......do the same with the kitchen foil so you end up with an envelope sort of crimped at the top not dissimilar to a Pasty.

Make sure all edges are secured as you want the fillets to steam inside the
package  !!!!!!!.....fridge till needed  !!!!



Place your vegetables in an oven tray,drizzle with olive oil,and a splash of vegetable stock,now season well  !!!!!
Now Roast your chosen Veggies.....200 degrees for 30 to 40 mins.

15 minutes before the end of cooking time place the Foil/Parchment
packages in the middle of the oven so the vegetables and Fish
finish cooking at the same time.



When cooking time is up remove Foil/Parchment package and undo....CAREFULLY....THE STEAM IS HOT..!!!!!!!



Remove the roast vegetables from the oven and place the veggies inside the foil package along with all the juices this saves on washing up.....simples !!!!!!

Lovely looking Bream, did you catch them and is that a bass as well?

Had a brilliant day afloat off of Portland Bill Dorset,a 4lb Bass and 12 Bream to 2lb.......cant get better than that JayB

yer,should have done it years ago ......but Luvvin it now were here.. :icon_cheers:

Jude gets in from work and after ive fed and watered her we drive 18 mins to Southbourne and walk along the beach as the tide is ebbing around our ankles,or we walk along the beach to a seafood restaurant and enjoy a bit of fresh fish with a house Jazz band playing a few  soothing melodies in the background while we sip on a glass of Italian Pinot.....talk about chilled

or wander through the local forest ....just us....with a backpack full of my best "sarnies" and a couple of apples from our new back garden with a drink.....woodpeckers flit from tree to tree and the Buzzards fly over the forest canopy ..."we" just enjoy
a bit of peace and quiet on our walks .....the memory of 30 years living 1/2 a mile from Herathrow airport noise and aviation fuel smells.......are just that ..............memories..... :icon_cheers:

oh and the fishing aint bad either..!!!!!!!!!!!!!!! :tongue3:
