Bottling/preserving fruit juice
« on: August 07, 2011, 16:44:22 »
You can see from my rosehip syrup posting earlier that I've spent the day thinking & planning how to preserve the bumper crop of autumnal fruits that are forming.

I've been looking up how to preserve fruit cordials and all advise bottling i.e. heating the full bottles in a waterbath to simmering/boiling for 10-20 minutes.

Then I wondered if the same procedure could be applied for straight fruit juice. I'm thinking of apple and damson juice (bottled seperately).

I know freezing would be easier but space prevents me from this.

I just wondered if anyone had tried home bottling of straight fruit juices and what the final result was like - taste wise for freshness & how long they kept.
