Elderflower Cordial - Freezing

Hi Folks,

have recently made my first batch of Elderflower Cordial, very pleased with the result.

Question, I have frozen the cordial in poly bags inside 500 ml margarine boxes. After 24 hours at -25 C
the cordial is still liquid but very thick.

I vaguely remember from School days (in a previous life  ) that sugar reduces the freezing point of water, this I can now confirm 

Will all bacterial activity have stopped ? will it be safe to drink this cordial in, say, 6 months time ?

I just keep it in sterilised screw top bottles... it keeps for 18mths + ( well it would....) Not sure about half frozen.. but not much can reproduce at that temp.

This year I have frozen masses of elderflower cordial in large yoghurt pots. It remains soft. When I need some, I let it thaw and then pour into old bought  elderflower cordial bottles. It is delicious, and I expect it to last for months and months.

In the past I have put it straight into the bottles, kept in fridge, and it has gone mouldy within a few weeks.
