A sugar free jam recipe from the WI "jams, pickles & chutneys" book:

A sugar free jam can be made from apple juice concentrate - available from health food shops.  The WI book states that these jams will not keep long - store in a cool dark place and once opened store in the fridge and use within 3-4 weeks of opening.  They will also not set so firmly (not really a problem!!!) A recipe is as follows: 8oz strawberries, 8oz blackberries, 8oz gooseberries, 8oz apple concentrate(weighed in a plastic container)

I have bought from the supermarkets in the past, sugar free jam (in tall narrow jars)  not because I am diabetic, but because the flavour is so like my grandmothers jams she used to make...  The company (forgotten the name) use grape juice concentrate instead of sugar, and yes they are runnier (easier to spread!) and the flavour is outstanding, so I am sure home made is even better  Grin

you mean st dalfour?

IIRC, the grape juice IS a problem for diabetics though - it's dextrose in the grape juice. apple juice contains fructose which is fine for diabetics.

st. dalfour used to make their jams with apple juice - or at least some of their varieties. when my dad was visiting in september i bought some but sadly they were all made with grape juice now.....

Hi Jesse,

Can't help on the sugar-free jam front I'm afraid - but I do have some nice recipes for sugar-free Passion Cake and Brownies - which are both very tasty - let me know if you'd like to try them and I will post them.
