A sugar free jam recipe from the WI "jams, pickles & chutneys" book:
A sugar free jam can be made from apple juice concentrate - available from health food shops. The WI book states that these jams will not keep long - store in a cool dark place and once opened store in the fridge and use within 3-4 weeks of opening. They will also not set so firmly (not really a problem!!!) A recipe is as follows: 8oz strawberries, 8oz blackberries, 8oz gooseberries, 8oz apple concentrate(weighed in a plastic container)

The company (forgotten the name) use grape juice concentrate instead of sugar, and yes they are runnier (easier to spread!) and the flavour is outstanding, so I am sure home made is even better
